Prep Time: 15 minutes
Cook Time: 10 minutes
2 medium sized zucchinis
1/4 cup whole wheat flour
2 TBSP olive oil
1/4 cup grated parmasean cheese
Salt and pepper to taste (optional)
Grate the 2 medium sized zucchinis in a colander
Use a clean dish towel to drain zucchini completely
In a large bowl, combine the grated zucchini with the rest of the ingredients listed
Heat olive oil in a large skillet over medium high heat
Scoop the batter onto pan and flatten with spatula
Cook until each side is golden brown
