Recipe of the Week 8.3.15

Zucchini Fritters

Prep Time: 15 minutes

Cook Time: 10 minutes

Servings: 4


  • 2 medium sized zucchinis

  • 1 egg

  • 1/4 cup whole wheat flour

  • 2 TBSP olive oil

  • 1/4 cup grated parmasean cheese

  • Salt and pepper to taste (optional)


  • Grate the 2 medium sized zucchinis in a colander

  • Use a clean dish towel to drain zucchini completely

  • In a large bowl, combine the grated zucchini with the rest of the ingredients listed

  • Heat olive oil in a large skillet over medium high heat

  • Scoop the batter onto pan and flatten with spatula

  • Cook until each side is golden brown
