Recipe of the Week: 9/10/18

Fiesta Football Bowls

Prep Time: 20 minutes

Cooking time: 10 minutes

Total time: 30 minutes

Yields: 6-8 servings



  • 12 oz fresh salsa

  • 16 oz frozen corn

  • 2 15 oz cans of black beans (rinsed well)

  • 2 red bell peppers (diced)

  • 2 handfuls of cilantro (chopped)

  • 4 cups brown rice (or quinoa)

Avocado Sauce:

  • 2 avocados (smashed)

  • 2 TBSP lime juice

  • 2 tsp cumin

  • 1 tsp chili powder

  • 1/3 cup vegan sour cream

  • 6 TBSP of unflavored almond milk (to make it thinner- optional)

Instructions: 1. On the stovetop, prepare brown rice. (1:1 ratio of rice to water). 2. While the rice is cooking, place all of the ingredients from the "base" ingredients in a large bowl and mix well. 3. Smash the avocados and add in the additional ingredients from the "sauce" instructions. 4. Once the rice is done, add the rice to the "base" ingredients and mix well. 5. Top the mixture with 1-2 TBSP of avocado sauce and enjoy!
