Recipe of the Week- 10.22.19

LOW SODIUM TURKEY NOODLE SOUP

Prep Time: 10 minutes

Cooking time: 20 minutes

Total time: 30 minutes

Servings: 6

Ingredients:

  • 1 lb organic ground turkey

  • 2 TBSP extra virgin olive oil

  • 1/2 cup onion (chopped)

  • 1/2 cup celery (chopped)

  • 3 cloves garlic (minced)

  • 6 cups low sodium chicken broth

  • 1 tsp Italian seasoning

  • 1/2 cup carrots (chopped)

  • 2 cups Modern Table Meals Lentil Rotini

  • 2 tablespoons fresh parsley chopped

  • Salt & pepper to taste


Instructions:

  1. Add olive oil to a large soup pot over medium-high heat. Add the onion, garlic, and celery and sauté for a few minutes.

  2. Add the ground turkey and cook for about 10 minutes on low heat.

  3. Add the broth, Italian seasoning, and carrots to the pot and bring the water to a boil.

  4. Add the Lentil Rotini and reduce to low heat. Cook for about 8-10 minutes or until the noodles are done.

  5. Season with salt and pepper as needed and add the parsley before serving.

  6. Enjoy!
