LOW SODIUM TURKEY NOODLE SOUP

1 lb organic ground turkey
2 TBSP extra virgin olive oil
1/2 cup onion (chopped)
1/2 cup celery (chopped)
3 cloves garlic (minced)
6 cups low sodium chicken broth
1 tsp Italian seasoning
1/2 cup carrots (chopped)
2 cups Modern Table Meals Lentil Rotini
2 tablespoons fresh parsley chopped
Salt & pepper to taste
Add olive oil to a large soup pot over medium-high heat. Add the onion, garlic, and celery and sauté for a few minutes.
Add the ground turkey and cook for about 10 minutes on low heat.
Add the broth, Italian seasoning, and carrots to the pot and bring the water to a boil.
Add the Lentil Rotini and reduce to low heat. Cook for about 8-10 minutes or until the noodles are done.
Season with salt and pepper as needed and add the parsley before serving.
