Recipe of the Week- 7.4.16

Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: 4 servings


  • 2 TBSP olive oil

  • 2 avocados

  • 1 pint of grape tomatoes (halved)

  • 8 small mozarrella balls (halved)

  • ¼ cup chopped basil

  • Salt and pepper to taste

  • 1 pound of ground turkey (99% fat free)


  1. Cut your avocados in half and remove the pit.

  2. Brush the avocado with a little olive oil and place face down on the grill for 5 minutes (until there are some char marks on the avocado).

  3. While the avocados are cooking, cook the ground turkey on the skillet until lightly browned.

  4. After the ground turkey is cooked, mix in the halved tomatoes, mozzarella, and basil.

  5. Place the avocados on a plate and add a spoonful of the mixture to each avocado.

  6. Side note: If you want to be able to add more mixture to the avocado, spoon some of the avocado out and add to the ground turkey mixture.

  7. Add some salt and pepper to taste and ENJOY!
