Recipe of the Week 7.19.17

Black Bean Beet Burgers

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Servings: 6


  • 4 beets

  • 1 cup cooked quinoa

  • 1 can black beans (rinsed and drained)

  • 4 TBSP Hope's Spicy Avocado Hummus

  • 1/2 cup whole wheat bread crumbs

  • 1 tsp cumin

  • 1 tsp thyme (optional)


  1. Preheat oven to 350 degrees.

  2. Cook 1 cup quinoa on the stovetop (2 cups of water for 1 cup of quinoa)

  3. While the quinoa is cooking, add the beets and rinsed black beans to food processor and begin to mix. ( I used my vitamix)

  4. Pulse the vitamix/food processor a couple of times until the beets are chopped into smaller pieces.

  5. Pour the mixture from the blender into a large bowl and add the breadcrumbs, cooked quinoa and spices. Mix well.

  6. Coat a baking sheet with nonstick spray or olive oil. Form mixture into roughly 6 patties.

  7. Cook patties for 40 minutes until lightly browned. (20 minutes on each side).

  8. Once the patties are done, add 1/2 TBSP of spicy avocado hummus on top and enjoy!
