Grilled Garlic and Balsamic Chicken and Veggies

Ingredients:

  • 1 1/2 lbs boneless, skinless thin sliced chicken breast

  • 3 tbsp pesto

  • 1 TBSP garlic powder

  • 1/4 tsp crushed red pepper flakes

  • juice from 1/2 lime

  • 2 tbsp olive oil

  • 3 tbsp balsamic vinegar

  • 1 tbsp raw honey

  • 1 bunch of asparagus with ends removed

  • 2 medium zucchini, sliced 1/4-inch

  • 1 bell pepper, seeded and sliced into strips

  • Olive oil cooking spray

Instructions:

  1. Marinate the chicken with pesto, garlic powder, red pepper flakes, and lime juice. Let it sit while preparing other ingredients.

  2. Mix oil, balsamic vinegar, and honey in a separate small bowl.

  3. Spray the grill with olive oil cooking sprary and heat the grill while preparing veggies.

  4. Put veggies on 1 large tray, brush with olive oil, and cook for 5-10 minutes or until browned.

  5. Cook the chicken about 5 minutes on each side, until grill marks appear and the chicken is fully cooked.

  6. Place the chicken and veggies in a baking dish and pour the balsamic mixture over the dish.

  7. Enjoy!
