Recipe of the Week- 2.29.16


Prep Time: 5 minutes

Does not require baking

Yields: 16 mini muffins

Ingredients:

- 1 cup of raw almonds

- 1 cup of pitted dates

- 1/4 cup of cocoa powder

Instructions:

1) In a blender/food processor ( I used my vitamix), blend the almonds until finely chopped.

2) Add in the dates and blend until they are mixed well and have a thick texture.

3) Add in the cocoa powder and blend for 10 seconds or so until all ingrendiets are mixed well.

4) Add 1 tbsp of mixture into the mini muffin tin and refrigerate for 30 minutes.

5) Enjoy!
