Sweet Potato Protein Bars
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
2 sweet potatoes (mashed and peeled)
1 scoop vega sport vanilla protein powder
1 vanilla Siggi's yogurt (2% fat, 5.3 oz)
1/3 cup sunflower seed butter (you can use any nut butter you would like)
1 TSP vanilla
2 TBSP Pure Maple Syrup
1 TBSP cinnamon
1/2 tsp baking powder
Preheat oven to 375 degrees.
In a blender, combine all ingredients until smooth.
Spray nonstick spray on a 9x9 inch pan and pour batter until evenly distributed.
Top the batter with cinnamon and place in the oven for 15 minutes or until lightly browned.
Let cool and cut into 8 servings.
Optional: Put in the freezer to harden.
