Recipe of the Week 7.19.17
Black Bean Beet Burgers

Cook Time: 40 minutes
Total Time: 55 minutes
1 cup cooked quinoa
1 can black beans (rinsed and drained)
4 TBSP Hope's Spicy Avocado Hummus
1/2 cup whole wheat bread crumbs
1 tsp cumin
1 tsp thyme (optional)
Preheat oven to 350 degrees.
Cook 1 cup quinoa on the stovetop (2 cups of water for 1 cup of quinoa)
While the quinoa is cooking, add the beets and rinsed black beans to food processor and begin to mix. ( I used my vitamix)
Pulse the vitamix/food processor a couple of times until the beets are chopped into smaller pieces.
Pour the mixture from the blender into a large bowl and add the breadcrumbs, cooked quinoa and spices. Mix well.
Coat a baking sheet with nonstick spray or olive oil. Form mixture into roughly 6 patties.
Cook patties for 40 minutes until lightly browned. (20 minutes on each side).
Once the patties are done, add 1/2 TBSP of spicy avocado hummus on top and enjoy!
