Broccoli and Cauliflower Tater Tots
Prep Time: 15 minutes
Cook Time: 25 minutes
Servings: 25 broccoli tots and/or 25 cauliflower tots
The broccoli and cauliflower tater tots are made separately.
1 head of broccoli or 1 head of cauliflower
1/3 cup of mild shredded cheddar cheese
1 cup of panko crumbs
Salt and Pepper to taste (optional)
Preheat oven to 400°F.
Blanch broccoli or cauliflower florets in boiling water for 1 minute.
Strain the broccoli or cauliflower and pat dry with a towel.
Finely chop the broccoli or cauliflower with a knife or blend in a food processor/vitamix for a few seconds.
In a large bowl, combine all ingredients.
Line baking pan with wax paper and spray with non-stick spray.
Scoop 1 TBSP of batter in hands and form into tater tot shape.
Place the tot on the pan and space 1/2 inch apart.
Cook for 15 minutes on one side (until brown) and flip for another 10 minutes.
Let the tots cool for a couple of minutes and enjoy! Add a little marinara sauce to dip the tots in for some extra flavor!
