Recipe of the Week 9.7.15

Prep Time: 10 minutes

Cook Time: 25 minutes

Amount: 10 servings

Ingredients

Batter:

  • 2 cups of old fashioned oats

  • 2 bananas

  • 3 tbsp honey

  • 1 tbsp cinnamon

  • 1 cup slivered almonds

  • 1 tsp vanilla

  • 1/4 cup flax seeds

  • 1 tbsp of coconut oil

Topping:

  • 1/2 cup old fashioned oats

  • 1/4 cup slivered almonds

  • 1 cup blueberries

  • 1/4 cup pumpkin seeds

  • 1/4 cup unsweetened almond milk

  • 1/2 tsp cinnamon

Directions

  • Preheat oven to 350 degrees F.

  • Use a food processor or vitamix to mix together batter until it is wet.

  • Pour batter into a 9x9 baking pan that is lined with parchment paper.

  • Bake the batter for 10 minutes.

  • While the batter is baking, mix the toppings together in a bowl.

  • Pour the topping onto the batter and bake for another 15 minutes.

  • Enjoy while warm or enjoy refrigerated!
